Salad Dressing

Tom’s Salad Mix is famous as being the best around.  We pick it daily, wash it, and spin it dry with a solar-powered salad spinner!  Everyone knows the ticket to a good salad is a good dressing!

Sam’s Yellow Curry Salad Dressing

If you know how Sam cooks, you’ll know it’s delicious.
1 can lite coconut milk
1 Tbs. Yellow Curry Paste
1/2 onion chopped fine
2 Tbs. Veggie Oil
1Tbs. Brown Suga’
2 Tbs. Fresh or dry basil
Juice from 1 lime
salt to taste
Heat oil until shiny and sautee onion until translucent Add curry paste and incorporate with oil and onions
Add suga’, cook for 2 min on medium heat Remove from heat, add coconut milk & lime juice Stir vigorously, scraping bits from the pan Add basil, transfer mixture to closed container and allow to cool, devour delicious salad with copious amounts of dressing

Maple Balsamic Vinaigrette

2 tbsp olive oil, preferably extra-virgin?2 tbsp balsamic vinegar?1 tbsp pure maple syrup?1 tbsp. Soy Sauce
2 tsp grainy mustard
Salt & freshly ground black pepper to taste
In a small bowl, whisk oil, vinegar, maple syrup, mustard, salt and pepper until?blended. (Alternatively, combine ingredients in a small jar, secure the lid and shake.)
Makes about 1/3 cup
