Cauliflower

Roasted Summer Veggies (Really just a variation of the Baked Broccoli…)

Ingredients:
1 head broccoli
1 head cauliflower
2 zucchini sliced diagonally
1/2 onion roughly chopped
2-3 garlic cloves, chopped
2-3 Tbsp. Olive Oil
1/4-1/2 c. grated parmesean cheese,
Lemon Zest
2 handfuls of basil, julienned
Directions:
Preheat oven to 375 F
Cut broccoli and cauliflower into bite size pieces, mix with sliced zuch, onion, garlic and lemon zest.    Toss with olive oil and basil, and then spread on a baking sheet.  Salt and pepper to taste.
Roast for 30 minutes, then cover with parmesaen cheese.  Put back in the oven for 10-15 more minutes then enjoy with a good risotto and perhaps a citrusy Viognier… Mmmm
